Elisa, Pastry Chef of Fattoria Maria
Nice to meet you, I’m Elisa!
When Fattoria Maria was born, Elisa was 12 years old. She grew up on the farm and doesn’t remember the exact moment she fell in love with cooking and desserts. She certainly always liked them, and growing up in a family where her mom and grandma always cooked definitely helped fuel this passion.
Before becoming a pastry chef at Fattoria Maria had to pay her dues: she started washing the dishes and slowly moved towards the kitchen, conquering her own space. Until Anna gave her the chance to be in charge of the desserts. And sometimes, she even went out of her field, like when an overproduction of plums gave her the idea to make caramelized plum gin.
Elisa is used to taking advantage of everything nature has to offer to try and innovate. She has found her dimension in simple desserts, with balanced flavors and top quality ingredients, because great food is oftentimes made of simple ingredients.
Desserts of the Emilian tradition
Elisa’s school was tradition. Shel learned from her grandma and her mom, who cooked for family and friends, and turned meals into something greater, a moment of fellowship.
Our story is made of tradition, flavors that you love that will always remain with you because they recall memories of a happy childhood. A tradition that has consolidated over the years with study and training, which Elisa revisits every day.
What is her favorite dessert? Bread cake: it tastes like Sunday, the cake prepared by mom or granny. Soaked in milk, just like she used to do at grandma’s house! Although she loves all cakes.
After all, she is pastry chef…
